T Stands for Some Baking and Other Things

     Hi everyone. Happy new week to you, and to those of you who stop by  Bleubeard's and Elizabeth's blog  blog, Happy T day to you.

    Last week we had a lot of snow melt (and sadly even had a bit of new snow),  although we are not down to bare ground yet.  My yard always seems to be the last place to lose snow, but we have lost much of what we had. I'd show you a photo of my back yard, but where there is  bare ground is now a field of what had been frozen dog poops, so I will spare you that view. 😱  However, the side yard where my veggie garden is pop free and doesn't look so disgusting.  Here's the view Friday. Saturday we woke up to a little new snow that luckily was all melted by evening, and now today/Monday, we're getting a lot of rain.  You can see how spring is going in my area.


   Since  my garden brain has been turned back on,  I ordered myself a new raised garden bed because I have room for one more in this area. I also need to go get some seeds because in a few weeks the nights should be warm enough that I can start some seeds in the greenhouse. 

   Last week besides a beach walk and lunch with some friends (both which I forgot to take any photos of), I was in a baking mood. One thing I tried my hand at was making foccaia. It turned out great and I ate too much of it. 😏 I was able to cut this loaf in half and freeze half of it for later.


    I used garlic oil (olive oil with garlic) and also some fresh rosemary that I clipped off my plant. I would have put on more rosemary but my plant isn't very large. However, the good news is my rosemary plant made it through this winter on my kitchen counter better than it did last winter by the sliding door.

   I also made some sourdough pizza one night. I also forgot to take a photo of that too. 😒 I usually make pizza once every week or two,  but recently I haven't made one for probably close to a month.


    I am also loving the sour dough discard muffin recipe I have found. (You can find it here from when I posted it a few weeks ago.) Last week I made another batch this time with 2 chopped up bananas and a few chocolate chips.  A couple of weeks ago I made another batch with blueberries.  I freeze all these once I make them because that way I can have one for lunch, breakfast or even an afternoon snack when the mood strikes.


    And if you're wondering why they are flipped in all directions it's because I use a plastic knife and loosen them when they first come out of the oven as they are less likely to stick to the pan while they cool. (Even though I grease the pan.)

   For T day I need a drink. I kept forgetting to take a drink photo.  😒However, last weekend when I visited my daughter we split a can of seltzer water  and I can show you the mugs we used. The Universal Orlando one was my mug, and I chose it because I bought it for her when I went to Harry Potter World a couple of years ago. The other mug is a Disney World mug she had bought when she visited once.

  5. Ewww, still snow (and dog poo, oh come on, that cost me two pairs of shoes already!)
    That´s a lot of baking - which reminds me... just Saturday I said to W I "owe" him an onion cake.... and boy, did he smile big, now I really have to!
    I have a plastic tray for (Pizza-) muffins - just plop them out any time! Wow. I can give baking tips! My Mom would never believe that (I was not allowed in the kitchen as I was afraid of anything hot).

  7. Dog poop is why I have cats (grin).

    I'm impressed with your baking. I don't bake anymore. Only when forced to do so, like the six loaves of cornbread I baked for Christmas presents.

  8. Your baking all looks terrific, Erika. Miriam hasn’t made focaccia bread for a while so I will have to drop a few well-timed hints. Recently I bought a loaf of sourdough bread at a local bakery and it was good but not terrific. Homemade blueberry bran muffins are pretty much a staple in this house. All the best - David

  11. Oh I love focaccia! I haven't made one in a long while.
    Thanks for the tip of loosening the muffins as soon as they come out of the oven. I always wait a while.

  13. Dear Erika,
    I've just sent my husband the recipe for the sourdough muffins. He's the baker in our house (mainly bread baker) and he diligently and regularly feeds his sourdough starter. He could definitely try muffins like that sometime, I think – preferably with berries 😋. Oh, and you're already starting seeds for your raised bed. What are you growing? Lettuce, vegetables? I always grow quite a lot of potatoes, plus Swiss chard, lettuce, tomatoes, Jerusalem artichokes, onions, zucchini, maybe some pumpkin again, and then I mainly have herbs and strawberries in my raised beds. I've also tried peas, green beans, and carrots, but they don't really work out for me... I prefer to buy them 😉😅
    Your rosemary focaccia looks incredibly delicious. Have you ever tried growing rosemary outdoors in a raised bed? I didn't have any luck with hardy rosemary plants before. Then a few years ago I bought one and planted it on a mound. It's survived many harsh winters and is now a magnificent, large plant. Because we've had a few wonderfully spring-like days here recently, it's even started to bloom! But now it's gotten cold again, ugh!

  14. Good tip on the plastic knife. Last time I did blueberry muffins (greased, too), they stuck like crazy. (I didn't use muffin cups.) That foccacia looks to die for.

  15. Very happy to read that Ms. Rosemary made it through the winter. Your bread looks AMAZING and so does the other bakes. I mean, you gotta lotta yummies here. Love your garden house and yard.
