T Stands for Christmas Cookies

Hi everyone. Another December T Day has arrived. I dawned on me next week is Christmas. Wow.

It also dawned on me that I haven't wished anyone  a Happy Hanukah either. Happy Hanukah to those who celebrate.

I'm starting off this post with a pretty silly tag for Tag Tuesday for their Anything Goes or Christmas theme.

I am making a little tag book about this year's holidays. Not sure I really want to remember 2020 or not, but it will be one to talk about in the future.
After coloring my background and adding the paper tape along the left side border,  I die cut the gingerbread baker and used white paint to outline her. Then I added the google eyes, as well as a heart sicker. I created the apron from some  scrap paper too.  I have a sheet of baking stickers, so I used a few of those .My penmanship  on the quote is not the best and overall this is not my usual style, but this tag has a silly feel. In a good way of course.

Like this gingerbread lady, I've  baking cookies lately.
WARNING: this is a high calorie post!

These sables are easy and buttery. I rolled them in some red and white sugar to make them festive. Then they are sliced and baked once the dough is chilled.

And jam filled thumbprints became hazelnut rolled and chocolate kiss cookies instead.

I've been trying lots of new recipes, as well as some much loved ones. So far I've made 8 kinds. I've been freezing many, and leaving some out to eat. I can't leave them all out though because I my husband and I would weigh an extra 20 pounds otherwise. Smile! I'm not a binge eater, but for some reason with this variety of cookies, I have been munching a lot. Guess I need to do a taste comparison. Smile!

These (above) are a new recipe for me that I pulled off of the Nordic Ware site. They are called biscochitos and are the official cookie of New Mexico. Since they sounded interesting and I love New Mexico, I gave them a try. They are not super sweet and are flavored with crushed anise seeds and orange zest.  I definitely am adding them to bake again list.

These pecan balls (Mexican wedding cakes) are a favorite of mine, not so much the hubby.
I also have some doughs in the refrigerator that I need to roll out. My husband requested sugar cookies, and for me, gingerbread and a  shortbread to roll out and cut.
Let me offer you a cup of milky chai tea as well as a "healthier" (ha-ha) plate with a few snack cookies. A sable, a brown sugar cardamom shortbread , and a chocolate chip cookie where I replaced the chips with Cadbury holiday chocolate candies and some peppermint M&Ms.

Be sure to visit  Bleubeard and Elizabeth's blog for T this week.  Hope  you join us with your drink related post.

Enjoy.

Sunday afternoon I got ambitious and put up new lights on my tree.

For those of you who might not have read, but first all the middle lights went dark and then the top ones. It didn't take me very long because even though the tree is tall, it is really thin.  Glad that is done, and  hopefully, it will stay bright.

Thanks for visiting, and have a great T day!

Hi Erika, I enjoyed seeing all of your cookie baking. I am only making a few this time week. I love using stamps too-I may bake up a recipe using those yet. Love that you got the new lights on your tree-that was a task but looks so pretty.

Wonderful baked goods, I swear I can smell those goodies! Love the fun tag, thanks for joining q again at Tag Tuesday! The night nurse makes cookies every night when we are sleeping, so there are always fresh cookies when I go into the kitchen to get my morning coffee. Happy T Day, hugs, Valerie

Yes. Reckon we will remember this year really.... big.

:-) I had/have a buttery one, too (there are still left overs!)! Just totally different!
A very happy T-day to you!

I absolutely love your tag. What a clever quote and well thought out composition. I love it, and it isn't fattening, either (grin). Unlike your cookies.

I am really wanting to make cookies this year, and I think I'll ask Sally to join me. You have made some incredible ones. I love your "presses" you used to make marks on some.

Thanks for sharing your tag, your diet coke, your incredible cookies, and your chai tea with us for T this Tuesday, dear friend.

Lovely artwork and great looking assortment of cookies. I used to make Pecan Balls! They are delicious! I'm assuming your snow forecast is similar to mine. :-( Right now it's still brown outside, but after the Nor'easter, everything will be white. I guess we'll be having a White Christmas this year. Happy T-Day!

What an unusual Christmas tree! I suppose it is practical because it doesn't take up much space. We don't have a tree (no room really) but if we got one, it would have to be one like yours!
Those cookies look so yummy. I never make cookies. I suppose I ought to try some this year. I'll be at my mum's so we don't have our equipment but those cookies that are cut from a roll look very easy.
Happy T-Day,
Hugs,
Lisca

Wow you have been busy in the kitchen. First I really like your tag. I am with you about memories of 2020. It has been a year for sure. Now for the cookies, they all look soooo good. I want to try that first batch with the red sprinkles on them. Have a very nice day today.

Your tag is adorable. Wow all the cookies. I haven’t done any Christmas baking yet. I thought I might bake today, but that will be storm baking. Just in case we lose electricity, we’ll have something good to eat that doesn’t require it to be heated up to eat. Fi gers crossed this storm moves further south and goes out to sea so we get no snow. Happy T Day

The tree looks great and the cookies to die for. Our version of pecan balls is called "Jingle Balls." I like the look of those sables. I need to do some cookies today and can't wait!

What a festive seasonal tag and then the goodies to go with it :) I have some small FiestaWare plates in red that I use this time of year. They make the food look even better :) All those cookies look delicious, and I love how there are so many different kinds. The biscochitos look hard to make with those fancy designs. I'm a fan of the wedding cookie but have never made them. One of these days... Happy Tea Tuesday!

you are making me drool I'm all about a cookie! I looked for the bischotitos recipe and can't find it. Apparently you need something special to make that pretty design too.
I love nothing more than a big tray of various cookies on hand but I've been making one batch at a time this year as there are just the two of us. LeeAnna

Wow, you have certainly baked up a storm this week with all those amazing looking cookies! They all look so delicious so maybe I better try one of each to see which I like best...lol 😀. Glad your tree lights are all sorted now, it looks so pretty! We haven't tried the Pineapple Milkshake beer yet, I really want to try it too but we are choosing the beers randomly each day so it will be a lovely surprise when we get to try it. Happy T Day wishes! Hugs, Jo x

Time just flies this time of year. Though it has been in the back of my mind and I've been preparing, your remark that Christmas is next week was a shock! Next week, really? Yes, next week!

I love your clever tag with the googly eyes and cute phrase. You even put an apron on the gingerbread girl.

Great looking cookies. I love the red trim on the sables. Why didn't the kisses melt in the oven???

Your tree is quite unique. It's lovely and I like the idea of fast to decorate. I'm glad you got the lights sorted out.

Happy T-day! Stay safe and well. Hugs, Eileen

Oh my goodness, I love that you made all those cookies! I looked up the biscochitos recipe and I think that I will have to give them a try, as well as the cardamom shortbread. My son has been baking up a storm and I am having the hardest time saying no to them. I have a major sweet tooth. Thank you for sharing all your bakes.
Your tag looks like the perfect start to a 2020 memory book. Love it!
happy Tea Day,
Kate

Oh wow I want to have Christmas at your house Erika!! Yummy!! Your tag is so cute and would go perfectly with my gingerbread men biscuits I got for my Grandsons. Sadly not homemade!
