A Great Version of a Favorite Sandwich


Tuesday again! Happy T day ladies (and also to any gentlemen who stop by).
Time to share a drink and maybe some food to go along with it over at  Bleubeard and Elizabeth's    blog. Every Tuesday is T Day.
So I like a good BLT sandwich. BLT stands for bacon, lettuce and tomato for those of you who maybe aren't familiar with this American classic. I like it even better with some yummy avocado sliced onto it. 
And recently, I saw a recipe in blogger Joy the Baker's newest book-Over Easy -where she added  a fried egg and cheese and called her sandwich a Breakfast BLT.
I left off the cheese but added an over easy fried egg. And I used some hand sliced bakery bread along with thick maple smoked bacon, a good tomato and some lettuce. My toast was more toasted than this photo shows, but I had to lightened it to show you a better view, and that made the toast look more like fresh sliced bread.
 I might not look like much in this photo, but I must say, that was one of the best sandwiches I have had in a long time.  I left the egg slightly runny.
And I had my sandwich with a glass of ice water.
It was way better than eating out.
So its been a grey and wet Monday here in my neck of the woods. The snow is melting:), but the mud is practically up to my ankles.  I want to go slashing around in it like a 5 year old. In fact, I did go sloshing around in it like a 5 year and it was fun, but I am thinking about going back outside and sloshing some more. I also had the day off because I went and got my tests done to see if I can still be the donor of a kidney for my husband (waiting on results), and after that I came home and spent some time in my happy place. I am almost done with my major cleaning, which is a big deal since it has been going on since the middle of January.
Otherwise, I enjoyed my Monday off from work and enjoyed having the day to myself. I watched another Highlander movie (the third one) and read a little bit of a new book (Ann Patchett's State of Wonder).

glad you snow is melting mud is always a good sign that spring is coming lol although it can be quite a mess.

That is quite a sandwich you "built" ;-)
My favorite breakfast these days is a piece of toast with a half mashed avocado on top.
Your mud sounds like something else and a good sign that you're headed closer to spring perhaps.

I can just smell the bakery bread and bacon. Looks so good.I might have to run out tomorrow and buy some bacon. Mud season has started down here, too, though the snow isn't melting fast enough. At least temps are supposed to be a bit milder. I'm anxious to get out into my happy place, the sun room. Happy T Day!

I would LOVE the egg and cheese added to mine. It sounds wonderful, and the cheese would replace the bacon for this vegetarian. It looks wonderful, though.

Glad you had some "me" time today. I have been working on my basement for months, and I'm still not finished. So I applaud you.

Let us know about the tests, as soon as you know something.

Not sure I could eat the sandwich with an egg but the bacon and lettuce sound great and water is always a good drink as well.

Now thats a sandwich I could really enjoy at any time of the day, it looks yummy.
Snow looks good but at the melting slushy stage its not fun no matter how deep it was, there is always mud to cope with in the gardens.
I hope you don't have long to wait for the results of the tests.

Now that sounds like the perfect day off! That sandwich indeed looks very scrummy. Funny how I never knew what BLT stood for. Thanks for enlightening me. And the traditionally baked bread would be my favorite too. You got me drooling by this point. (It's nearly lunch time)
I hope you get positive results from your test. I suppose if you were once suitable, that won't change, so I'm sure it'll be OK.

I don't cook bacon but enjoy eating it, and BLT is one of my favorites. I've recently discovered how good it is with avocado, but I've never tried egg. So many variations!

All mud stomping aside :) THAT is ONE GREAT LOOKING SANDWICH!!!! Dang it and I just ate breakfast. Perhaps I can have one for a late lunch cause I doubt I can wait until tomorrow.

Oh Erika, that sandwich looks delicious! I love egg and BLT is my favorite so even better. Better bread than an egg McMuffin! I might have to have that for dinner one night -- when tomatoes get better!

That sandwich looks delicious. We do BLT with turkey. I guess technically that's called a clubhouse sandwich. A nice runny egg is a great addition too. I played in the mud this week too ;-) I'll share in our next T-party.
