T Stands for Cookies

Last Saturday it was snowy and so that made it a good day to stay home and play in the kitchen. It was cookie baking day.
You can see my diet coke in the background. 
And  I'm showing you a little drink since it is also Tuesday,it is time for T. Stop by Bleubeard and Elizabeth's  and join us for T or whatever else is your drink of choice. 
 I began by making the dough for some hazelnut crescents. I think it was Susi who showed some of these last year. They looked so good I went and found a recipe to try them. I was lucky to find a recipe in a cookbook I had.
 And I tried a new recipe for these soft gingerbread circles. These were fun to make. You roll them into a ball, press with a cookie stamp, bake, and then drizzle some sugar glaze over them. I love how they shine.
 Then I made some shortbread. 
 I had some peppermint bark and put it in to flavor these.
Finally I tried making some German springerle. I used what the cookbook said was the original way they were made, without butter.  Some of you might know that better than me as I have never made or tried these cookies before.
I found the dough a little hard to work with, but I did manage to get them rolled and made.
 Last year for my birthday my hubby got me one of these fancy carved rolling pins. On my birthday we had gone to a baking store (my pick not my husband's) and they had these rolling pins marked way down. My birthday comes in March and people aren't looking for rolling pins to make holiday cookies then. That's ok, it, doesn't spoil and I have it now for holiday baking. :) The hubby bought it for me since he said I would never buy myself one. Plus he knows how much I like animals.

Here's the final cookies. I am happy with the imprints. Next time I am going to try a different recipe though.
So have a cookie (or 2) along with a cup of coffee or tea. Or milk and water if you prefer. And if you're in the chill and nasty weather that we are going to get, maybe even a cup of coco to warm you up.

Wow, your cookies look amazing! The cookie stamps you used are beautiful and I bet they taste as good as they look too - yum! I think I may have to see if I can make something similar for presents next year 😁. Wishing you a very Happy T Day! J 😊

a diet coke- what a surprise;) :) Your cookies are definitely bakery quality looking and I'm sure equally delicious! I used to bake lots of fancy cookies, but that has gone by the wayside and I keep it much simpler now. We had our first snow on Sat. 6.2 ". Pretty, yes, but I can do without. Happy T day!

Erika your animal cookies turned out amazing! I wish you would have showed your rolling pin.. i bet its beautiful too. I'd like to try making those crescent cookies ... i think they'd be wonderful to add to my repertoire..:) Happy T day!! Hugs! deb

i just LOVE These Cookies from the Picture roll!! they look somewhat medieval, don´t they? soooo beautiful!! do you know in former times These sometimes were baked from a dough that dries very hard, they painted them and took them as decorations for Christmas trees. because of their dryness they could not decay and were durable for many years. but These were not edible;)
i should not talk so much and better bake some Cookies myself. not yet in the mood... will it come in time??

I'm in cookie baking heaven here. I think Susi is making something similar today, that is if she can pull herself away from her drawings. I've made something similar in the past using anise seed and orange rinds.

I LOVE gingerbread, and these look so special with their glaze and shine. Just STUNNING. I want to eat them all.

I can't imagine baking cookies without butter. But I really LOVE the rolling pin you used. Your husband knows how to spoil you, that's for sure.

Cookies! Yay! They all look delicious but I especially like the look of those made with your new rolling pin. How nice of your husband to get that for you. If friends visit you have a nice selection of treats to offer them.

When I was younger I collected many cookie stamps, pottery molds for getting imprints and I had found one of those rolling pins at a garage sale of all places-I know how super expensive they are new and at full price-they are a joy to use aren't they?? I have had allot of fun using mine, I collect vintage cookie cutters too
I have not made shortbread in some time now-thanks for the reminder-I have a holiday pan too that I am going to locate. your cookies are sooo beautiful I love them

Oh my this was a delicious post to read. All the cookie baking has me reaching out for one to have with my cuppa.
The animal imprints look great, I think I would be using them throughout the year , is the rolling out pin easy to use, the images look so perfect.

Oh my gosh! Your cookies look all so wonderful! The gingerbread circles and the springerle - never made springerle or know somebody who made/make them by oneself .You are a really good bakery girl Erika!!!
I have made a big amount of Vanillekipferl- dough already - the trick is that the "Vanille Kipferl" get better with each day the dough waits in the fridge to get baked.That's really true! And I let the dough wait!!! Lol!

Wow! These are so magnificent! I am on the other side of the screen mouth watering and wanting a taste of everything that you made. They look so beautiful. I really wanted one of those Springerie molds but I couldn't believe how expensive they were. I am going to have to check for sales online after the holidays like you.

Beautiful cookies, Erika. Each one is a work of art. Here's how much I know about springerle cookies. I thought they were imprinted using stamps! The rolling pin idea surprised me. How clever. If I had one, I think it would be on display the rest of the year!

Oh Erika, I bow down to you! Those cookies look like the best ever! I'm impressed with your imprints. Mine are never so good and I love the shortbread/springerle. I was baking yesterday too, but wasn't nearly so productive as you have been! I'd better up my game but there's no competition. You'd win, hands down!

Oh yum....love the shortbread. It looks so formal. I made raspberry shortbread bars last week as a test recipe. So good, but butter butter butter. Got myself Paul Hollywood's newest baking book which is more about home style baking. Looking forward to trying som recipes. Now to translate my metrics...xox
